Does anyone have any favorite recipes that they cook for their family? I kinda like new ideas to branch out our meals with. :) We don't eat a lot of meat. When we do it's either hamburger in tacos or spaghetti or chicken with rice or salad. I really, really, really, don't like fish!!!!!!!! :)

welp…we eat a lot of really easy-to-cook stuff….(tacos, spaghetti, chicken and rice, etc.) My favorite is Mexican food…whenever we make Mexican rice it always turns out really "tomatoey"….which I do not like at all! I really need to find someone with a really good Mexican rice recipe. (I actually know one person but she's a missionary in Grandview, WA and I forgot to ask her for her recipe while she still went to our church :( )

Here is one of our favorite cookie recipes…pretty easy!

CHOCOLATE OATMEAL NO-BAKE COOKIES
2 cups sugar
1/2 cup cocoa
1 stick butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.
Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes. (we put them in the freezer…works good)

Enjoy!

Here is a recipe a friend sent to me.

Three Grain Pan Rolls- Yields 22 rolls

2c. water, 1/2c. bulgar wheat, 1Tbsp. dry yeast, 1c. warm milk, 1/2c. quick oats, 1/3c. honey, 2 eggs, 2tsp. salt, 3/4tsp. pepper, 5-6c. whole wheat flour, 2Tbsp. olive oil, 2tsp. celery, 2tsp. fennel seed, 2tsp. sesame seed and 1tsp. poppy seed.

Directions: In a saucepan, bring water to boil. Stir in bulgar. Reduce heat; cover and simmer for 15 min. Drain. In a large mixing bowl, dissolve yeast in warm milk. Add the oats, honey, eggs, salt, pepper, bulgar and 1/2 of the flour. Beat until smooth. Stir in the rest of the flour to form soft dough and knead until elastic. Place in greased bowl, turning once to coat top. Cover and let it rise for 1 1/2 hrs. Then, punch dough down. Turn onto lightly floured surface; divide into 22 pieces. Roll into balls; arrange 11 balls into a square, 9" in. greased pan. In a bowl, combine seeds. Brush roll tops with oil and sprinkle with seeds. Cover and let it rise for 40 min. Bake @ 375 for 18-22 min. or until golden brown. Finally, remove from oven and let it cool. And now you have your Three Grain Pan Rolls. Enjoy!

I found my new all-time favorite food…ever! Spaghetti Squash :) It tastes pretty much like spaghetti, just a little crunchier :) I had it for the first time last night….and decided right away it's one of my favorites!

Have any of you had it before?

My mom's had it before, and she likes it (actually, she had it when we were in Nashville at the Bible Bee!!!), but I don't like the general squash texture or taste much, so I didn't try it. =)

I forgot to mention this part…there was spaghetti sauce and cheese in it too, so it wasn't just plain squash…

I didn't think I would like it at all, but I took just a little bit on my plate. I took the first bite, and told my older sister - "Amy this tastes just like spaghetti, it's one of my new favorite foods!" =D

Hehe…I'm a very unpicky eater as well :) The only thing I won't eat are fish =D

Here's the recipe (I've haven't made it myself yet…) –

  1. Buy a spaghetti squash (or if you already have on, that's great :P). They are shaped like a watermelon somewhat…more long and slender though.

  2. Cut them in have lengthwise so you have 2 long halves. The rinds are super hard to cut so have an older brother or dad help with this part :)

  3. Once cut, scoop out all the seeds and such. Add about 1 tablespoon of water to the inside to keep in moisture. Cover the tops in foil and bake face up at 375 for 30 minutes. After 30 minutes are up, take off the foil and bake for 10-15 minutes longer. You will want to be able to stick the fork into the meat of the squash and have it feel pretty soft.

  4. Take them out, let them cool a bit so you can touch them. Using a fork, simply scrape the insides from top to bottom and the squash will easily pull out in strings. Just keep scraping and scraping until no more will come loose. Add sauce and cheese if you like and ENJOY :)

This is one that I like without the chocolate (I don't like chocolate):
The original recipe:
1 1/8 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
3/8 cup granulated sugar
3/8 cup packed brown sugar
1/2 teaspoon vanilla extract
1 large egg
1 cup semi-sweet chocolate morsels
1/2 cup chopped nuts (optional)
We modified it like this:
1/4 cup butter more
1/8 cup granulated sugar more
1/8 cup packed brown sugar more
1/4 teaspoon vanilla extract more
1/2 cup peanut butter chips
1 tbs peanut butter
cinamon added
no nuts except peanut butter and peanut butter chips.

@Rachel - I made these just the other day for the first time! (I wanted something I didn't have to bake. :) I liked them but they had a bit too much sugar for my head. (I got a headache :( )

@Bethany P. - I can't stand fish either…… :) That's one of my only eat if I'm starving to death foods :P

@Little Miss Sunshine – Well…I can't stand the smell either. Anytime my mom cooks fish, the whole house smells like it…which is a rather disgusting smell, if you ask me :) I don't prefer any kind of "underwater food" – shrimp, fish or anything else people around the world eat =D

Other than fish though, I'll eat just about anything you give me!

@Rachel - Oh that's okay…I made them before I saw your recipe…it was a long time ago. :) I'm better now!

@Bethany P. - I'm the same way! I can't stand the smell….or any other kind of thingy that swims or lives underwater :P (I have some friends who moved to Japan and they know I don't like seafood…they used to always be showing me pictures and describing the "wonderful" seafood they were getting to eat. It was sooo gross! :)

Although I do like fish and shrimp, I can understand why some people don't. Do either one of you like sushi? I'm sort of guessing no, because the outside is covered in seaweed.

I do like fish….
but our family (not including my Grandma and Mom) HATES mayonnaise !! YUCK YUCK YUCK!!!!!!!!!
Besides, I can't stand to eat tuna out of a can…it looks/smells too much like cat food :p And I had a bad experience with it. And those 2 go on tuna sandwiches so they are out the window for us :p

I just thought of my other food that I can't eat (well, actually, I can, but it takes about 30-1 hour to eat just a little bit)

OATMEAL :) That stuff is so….interesting. The only way that I can even think about eating it, is mushing about 10 bananas into one bowl of it (maybe a bit over the top…close to 1-2 bananas). Yeah, the consistently is slightly strange and stuff. Syrup and brown sugar just make it worse, that's all.

It's fish and oatmeal that I can't eat. Other than that, I'm good with anything :P

Yes, you are very funny!!! :D I know what you mean about the cat food thing, though. We actually do use it for cat food sometimes, if we run out of the dry stuff. :) But I really do still like it. I don't like mayonnaise either, or relish, but I still like tuna sandwiches. :)

Concerning other fish…well, I like some of it, like salmon, and trout (if it has enough seasoning on it, just plain, trout is kinda nasty). But pretty much, I only eat fish if there's nothing else. :) Tuna is good though. Even my mom likes it, and she HATES fish. I don't mind some shrimp, if it's cooked right. It's been a long time sense I had lobster, and I don't like crab at all. It's kinda yuck. My dad LOVES fish though. He eats it almost every day. (I couldn't do that =))

I don't like very many cooked vegetables, but I like most of them raw. I don't eat beef, and I only eat pork every once in a while. Mostly just chicken and turkey.

I guess I'd probably go in the picky eater category. :(

lol..that's true :P I love bananas but they make me gag… along with yogurt..I like it a lot but it makes me gag. :( I'm definitely a picky eater!
I could list off a whole bunch of stuff i "don't like" and most of them I would eat but when I say "don't like" I just mean it's not my fav. :P anyway…people think I'm kinda picky cause I'm always saying I "don't like" something and really it's just not my favorite…sorry…my grandma's shift key is kinda broken :P

I eat oatmeal almost everyday with about half a bananna. It is pretty good. We also enjoy syrup in it. It makes it really taste good. Something else like oatmeal is corn grits. They are pretty good too. I like those with frozen blueberries. We also eat both of those with flax seed. I like that because it changes the consistency and makes it a little chewier.

So, Nicolas, you like oatmeal? Good for you! I try so hard when I eat it (the every two months that I do!) to like it, but I can't…I don't know but I just can't.

Normally, I'll sit down at the table and think "now, Bethany, you'll like this; just start eating and it'll be fine" but it never works, it's still just SO gross :)

Jackie, I don't really like squash but when I do eat it I prefer to eat acorn squash. You may like it. It tastes kind of like a sweet potato. My mom likes to put sauce and cheese on it and make it like a squash pizza.

Maybe you all are cooking your oatmeal wrong. We have it frequently at our house and buy it in the 50# bag size, and I dont mind the tase much; if cooked badly though it can taste pretty bad. I dont think bannanas usually help, just a little sugar and butter.

Speaking of Southern food, who here likes…. Liver mush? (or, have you even heard of it? :D ) My brothers gulp it down when we have it around….I'm not a big fan of it…… :)

And have you ever taken a long cool drink of refreshing, Iced, Sweet Tea? VERY yummy. But right now I'm drinking coffee :D
